Cristina Fernandez; Made half the recipe; Used ground turkey, chickpea rotini, can of Hunt’s diced tomatoes instead of salsa, and added a yellow bell pepper. It was delish!
lauren kemp; It turned out great! Everyone really loved it. We added corn, red beans and some other spices. We also added pepper jack cheese for spice, some Velveeta to make it creamy and the rest just cheddar cheese. We served it with sour cream and Doritos on top. We plan to make this again.
Lynette Knight; Came out good. Used Veggie Rotini like someone suggested as a healthier option.(couldn’t really tell like you can sometimes with veggie pasta) also, I would suggest stirring halfway through (it may say that, I can’t remember) but not all the pasta was submerged so at the end of the 15 mins some of the pieces at the top were still crunchy. Just added a tad more water, stirred on low and covered for another 10 mins and came out fine.
