Cait; I made this recipe last week, it turned out okay. Everyone said it was fantastic but being the critic I am I think there needed to be more lemon flavor. The frosting also could have used a certain ‘oumph’ as well to make everything even better.
Miya; I loved those cupcakes. If you have too much icing left over like I did, just be prepared to bake some more. This gave me the idea to add blackberry juice to cream cheese icing to make it purple for my sister’s b-day cake.
My; I only made the cupcakes, I think there needed to be more lemon flavor, overall the cupcake was easy to make and very moist. I made a diff frosting BlackBerry from a diff recipe that seemed easier!
Liz; Loved the lemon cupcakes (I added the extra lemon juice), but I wasn’t a huge fan of the frosting. (1) straining the blackberries was a royal PITA and (2) the frosting was WAY too buttery for my taste…I guess I’m just too partial to cream cheese frosting.
