Vanessa Colley; Great recipe and you can change it up and use whatever peppers you have. I used red bell pepper, poblano, and yellow onion. I also added a packet of sazón and left out the tomato paste and cayenne.
Valencia; Used spicy andouille sausage, added sazon, a bit of sofrito, and omitted the extra broth. I also used tomato sauce, not paste. Turned out great. Would make again. My suggestion is to tweak spices how u want, I never follow a recipe exactly.

No yellow pepper in the house, so used green and red, otherwise followed the recipe. I was pleasantly surprised. Paired this with a tossed salad and a glass of wine.
