Today we are talking salads. Now I take salads very seriously, guys. A salad can totally be a hit or a miss, and if I’m gonna convince people to eat a salad, I need to make it good. So today’s recipe I am making my winter detox salad.
It’s delicious. It’s filled with the right crunch, the right creaminess, with the perfect dressing. It’s zingy and delicious.
You guys are gonna love it. And in my opinion if this is the only salad you eat all year then you’re good to go.
We’re gonna first start with the dressing. In a high speed blender I’m adding in some olive oil, apple cider vinegar, fresh lemon juice. I always love to juice my lemon fresh, especially when it comes to salad dressing, so I love using this little handy lemon juicer.
For some sweetness I’m adding in some maple syrup, Dijon mustard, garlic, a good chunk of ginger. I love the ginger,
adds a really nice spicy element to this dressing. And then to add some more spice we have some cayenne pepper,
just a pinch. It’s just gonna really help bring this dressing to the next level, and then of course a little bit of sea salt and black pepper.
Blend everything together until creamy smooth and it’s just gonna be the most delicious, fresh and zingy salad dressing, perfect for this time of year, when you need a little bit of sunshine in your life.
Now for the salad, in a large bowl I’m going to mix together some black kale that’s been de-stemmed and thinly sliced, red cabbage which I also have just thinly sliced with a mandolin, and then I’m taking about half of the dressing and I’m just gonna drizzle it over top and massage it in with my hands.
So this is gonna help the cabbage and kale to kind of break down and soften a bit so it’s not so hardy when you’re biting into it. It just makes it a little bit easier to eat and digest. Next we’re adding in some carrot ribbons. \
Sliced green onion. I love onion in my salad, but I find the green onion is a little bit more of a delicate flavor instead of just straight on red or white onion. Then I have some chopped up crunchy apples. I love anything like Fuji or Pink Lady for salads like this. Then for some creaminess and healthy fats, I’m adding in some cubed, ripe avocado,
’cause I just gotta put avocado in everything.
Drizzle on the rest of that delicious lemon/ginger dressing and garnish with some toasted pine nuts. You can really use any nuts or seeds that you like, but I’ve just been loving pine nuts lately, and I feel like they just don’t get enough love, so I’m adding them into the salad.
Give everything a nice toss to evenly mix that dressing and all of the yummy ingredients. Then you’re ready to plate and enjoy. I love this salad. I love the colors, the flavors. I just think it’s the perfect salad for this time of year,
and I know you guys are gonna love it.
